Happy World Pasta Day!

I know, I know! Who thinks of these things, right?!

Who cares – it’s fun!

Here is a super simple, hearty and delicious lasagna recipe with a twist. Give it a try and let me know what you think!

  • 1 box of your favorite lasagna noodles
  • 1 small jar of your favorite marinara sauce
  • 1 15 oz tub of ricotta cheese
  • 1 egg
  • ½ cup of grated parmesan cheese
  • 1 tbsp. of parsley
  • ½ of small jar of your favorite pesto sauce
  • 3 cups of mozzarella cheese
  • 2 tbsp. of salt -1 of which is to salt your pasta water
  • ½ tbsp. of pepper


  1. Cook your pasta according to box directions with 1 tbsp. of salt.
  2. Preheat your oven to 375 degrees.
  3. Spray the bottom of your 9×13 pan with cooking spray.
  4. Add your ricotta, parmesan, 1 tbsp. of salt, pepper, egg and parsley in a bowl and mix well. Set aside.
  5. Ladle a few spoons of your sauce on the bottom of the pan.
  6. Place your first layer of lasagna sheets. I used 4 just so it holds everything together well.
  7. Spread about 2-3 spoons of pesto sauce over the pasta and a handful of mozzarella cheese.
  8. Next layer of noodles. You can do 3 this time.
  9. Now add the ricotta mixture and cover with half of the marinara sauce.
  10. Next layer of noodles. 3 again.
  11. Spread about 2-3 spoons of pesto sauce over the pasta and a handful of mozzarella cheese.
  12. Next layer of noodles. 3 again.
  13. Finish off with the rest of your ricotta mixture and marinara sauce.
  14. Add the last 4 of your lasagna sheets and cover them with the remaining mozzarella cheese.
  15. Cover with foil and bake for about 30 minutes.
  16. Take the foil off and bake for another 10-15 minutes.
  17. Let it cool for about 15 minutes before serving and serve with a side salad.

TIP: This is a noodle heavy dish. If you like less noodles and more filling, just skip one of the layers and/ or add sautéed veggies or meat sauce.
