Portillo’s [dupe] Chocolate Cake

This post does NOT need an introduction. I think it speaks for itself 😍I did not come up with this recipe on my own. A few years ago, I needed a chocolate cake recipe for my daughter’s birthday and decided to look up some easy recipes. Tons of posts popped up, including several for Portillo’s copycat chocolate cake. Portillo’s is a Chicago staple and I had to try it. Everyone loved it so much that this is the only cake I make for parties. Here is the recipe!

Portillo's -dupe- Chocolate Cake

  • Servings: 12

INGREDIENTS

  • 3 eggs
  • 1 cup of mayonnaise
  • 2 cans of Betty Crocker whipped chocolate frosting
  • 1 box of Betty Crocker devil’s food cake mix
  • 1 cup of cold water
  • OPTIONAL: THAWED COOL WHIP

DIRECTIONS

  1. Preheat your oven to 350 degrees.
  2. Grease two, 9″ round pans.  
  3. In a medium bowl, empty the bag of devil’s food cake mix. To that add 1 cup of mayo, eggs and water. Mix until everything is incorporated.
  4. Pour the batter evenly into the pans.
  5. Bake for 30, 35 minutes or until a toothpick inserted in the middle comes out clean.
  6. Cool on wire rack for at least an hour.
  7. Place one cake on the cake stand and using a spatula spread some of the frosting over the first cake. Top it off with the 2nd cake and spread the rest of the frosting all over it.
  8. Decorate as you please or serve as is. YUM!

TIPS:

  • If you need a 1/2 sheet cake for a party, double the recipe and use a 18×13 pan. Then cut the cake to make 2 layers for filling.
  • You can make the cakes ahead of time. Once cooled, wrap them up in paper and foil or put them in containers and refrigerate for 2-3 days.
  • If you want a little more fluff and flavor, mix the chocolate frosting with cool whip and use that for the filling or all over too.

Here, one of my cakes came out much thicker, so I sliced it in half and made 3 layers! I also mixed the frosting with cool whip [note the lighter filling] for more flavor.

    Portillo’s chocolate cake is a birthday staple in our house. I’ll definitely have to give this a try. I’ll let you know how it turns out
