Portillo’s [dupe] Chocolate Cake

Disclaimer: I did not come up with this recipe on my own. A few years ago, I needed a chocolate cake for my daughter’s birthday and decided to Pinterest easy birthday cake recipes. As you can imagine, tons of posts popped up, including a few for Portillo’s copycat chocolate cake.

Portillo’s is a Chicago staple and having lived here most of my life, I grew up eating it. I absolutely love it and had to give this homemade version a try.

It ended up being so good and almost identical to the store version. I’ve made it many, many, many times again. Everyone loves it so much and it’s my go to cake for parties.

Portillo's -dupe- Chocolate Cake

INGREDIENTS

  • 3 eggs
  • 1 cup of mayonnaise or sour cream
  • 2 cans of Betty Crocker whipped chocolate frosting
  • 1 box of Betty Crocker devil’s food cake mix
  • 1 cup of cold water
  • OPTIONAL: THAWED COOL WHIP
DIRECTIONS
  1. Preheat your oven to 350 degrees
  2. Grease two, 8 or 9″ round pans
  3. In a medium bowl, add the bag of devil’s food cake mix.
  4. To that, add 1 cup of mayo or sour cream, eggs and water. Mix until everything is incorporated.
  5. Pour the batter, evenly, into the pans.
  6. Bake for 30-35 minutes or until a toothpick inserted in the middle comes out clean.
  7. Cool on wire rack for at least an hour.
  8. While the cakes are cooling, add your frosting to a bowl and mix with a hand mixer for 5 minutes. Or if you have a stand mixer, use the whisk attachment and whip it up for 5 minutes. This will make the frosting extra fluffy and delicious.
  9. When ready, place one cake on the cake stand/ plate and spread some of the frosting over it. Top it with the 2nd cake and spread the rest of the frosting all over it.
  10. Decorate as you please or serve as is.

TIPS:

  • You can make the cakes ahead of time. Once cooled, wrap them up in plastic wrap and/ or foil and refrigerate for 2-3 days.
  • If you just want three layers, you can use the same ingredients and just spread the batter into three 8″ pans.
  • If you would like a lighter fluffier flavor and filling, mix the chocolate frosting with cool whip. It can be used as filling or frosting.
