One Pot Dinner: Unstuffed Peppers

I grew up eating Eastern European Stuffed Peppers. It was one of my favorite childhood dishes. I didn't particularly care for the peppers, but I loved the stuffing. I also loved the aroma the peppers provided but the texture and the taste - was not my thing.

Fast forward to adulthood and peppers are one of my favorite vegetables. But making that old school dish is not my favorite. Simply put: it's too much work and I don't know if you've noticed but I don't like recipes that require a lot of work.

Here is my version of STUFFED PEPPERS - the easy way: unstuffed.

Ingredients:

TIPS: You can make it vegetarian and use 1 found of chopped portobello mushrooms or black beans.
