Ingredients:
- 2 tablespoons butter
- 1 cup onion, chopped
- 3 cloves garlic, minced
- 4 cups broccoli florets
- 2 cups chicken or vegetable broth
- or 2 cups of water with 2 tsps chicken bullion
- 1 cup milk (dairy or non-dairy)
- 1 cup shredded cheddar cheese
- 1/2 cup grated Parmesan cheese
- 1 teaspoon flour
- pinch of salt (add more later if needed)
- pinch of pepper
- 1/4 teaspoon paprika
- 1/4 teaspoon cayenne pepper
Instructions:
- Press the "Sauté" button on the Instant Pot. Melt butter; cook onion until softened.
- Add garlic; cook 1 minute.
- Add flour, broth, milk, broccoli, cheddar, Parmesan, salt, pepper, paprika, and cayenne. Stir.
- Close lid; set valve to "Sealing". Press "Manual" or "Pressure Cook"; cook 5 minutes at high pressure.
- Let pressure release naturally 10 minutes; quick-release remaining pressure.
- Blend soup until desired smoothness using an immersion blender or transfer to a blender.
