Happy Pasta Day!
I know, I know! Who thinks of these things, right?!
Who cares – it’s fun!
Here is a super simple, hearty and delicious lasagna recipe with a twist. Give it a try and let me know what you think!
Ingredients:
- 1 box of your favorite lasagna noodles
- 1 small jar of your favorite marinara sauce
- 1 15 oz tub of ricotta cheese
- 1 egg
- ½ cup of grated parmesan cheese
- 1 tbsp. of parsley
- ½ of small jar of your favorite pesto sauce
- 3 cups of mozzarella cheese
- 2 tbsp. of salt -1 of which is to salt your pasta water
- ½ tbsp. of pepper
Directions:
- Cook your pasta according to box directions with 1 tbsp. of salt.
- Preheat your oven to 375 degrees.
- Spray the bottom of your 9×13 pan with cooking spray.
- Add your ricotta, parmesan, 1 tbsp. of salt, pepper, egg and parsley in a bowl and mix well. Set aside.
- Ladle a few spoons of your sauce on the bottom of the pan.
- Place your first layer of lasagna sheets. I used 4 just so it holds everything together well.
- Spread about 2-3 spoons of pesto sauce over the pasta and a handful of mozzarella cheese.
- Next layer of noodles. You can do 3 this time.
- Now add the ricotta mixture and cover with half of the marinara sauce.
- Next layer of noodles. 3 again.
- Spread about 2-3 spoons of pesto sauce over the pasta and a handful of mozzarella cheese.
- Next layer of noodles. 3 again.
- Finish off with the rest of your ricotta mixture and marinara sauce.
- Add the last 4 of your lasagna sheets and cover them with the remaining mozzarella cheese.
- Cover with foil and bake for about 30 minutes.
- Take the foil off and bake for another 10-15 minutes.
- Let it cool for about 15 minutes and serve with a side salad.
